Bolzano Artisan Meats is bringing back the Milwaukee tradition of fine artisan meats by creating its own handcrafted salami using regional heirloom pigs.

Fund Milwaukee members have made three separate investments to help them grow and bring their salamis to the rest of the country. Scott Buer and Christin Johnstone-Buer have been growing their business in Wisconsin for the last several years, having recently established their 80th outlet in the state. The investment coordinated with Fund Milwaukee will help to complete required testing for interstate commerce.

All of Bolzano’s salamis are made with heirloom pork, sourced from regional farmers. The variety of salamis highlight traditional flavors as well as some new twists. While Scott and Christin are regulars at the area’s farmers markets, you can find Bolzano’s salamis at many area outlets. Scott and Christin also put their energy into classes, tours, and celebrating local food by working with Slow Food Southeast Wisconsin.
